Coconut & Shrimp Thai Green Curry

Approx 4 Portions

Thai Green Curry Base

1 x Medium white onion (Peeled & Sliced)
4 x Garlic cloves (Peeled & grated)
2 tsp x Fresh ginger (Peeled & grated)
1 x Red pepper (De seeded & sliced)
1 x Green pepper (De seeded & sliced)
1 tsp x Ground cumin
1 tbps x Fish sauce
2 x Green chilies (De seeded & sliced)
1 x Lemongrass stick (Bruised with a knife)
2 x Kaffir lime leafs
400ml/13.5floz x Can Reduced fat coconut milk
1 x Lime juice

Green Vegetables

3 Handfuls x Washed spinach
80g/2.8oz x Garden peas
113g/4oz x Sugar snaps

Shrimp

226g/8oz x Large shrimp (Deveined & Deshelled)

Rice

200g/1 Cup x Long grain rice
500ml/2 1/4 Cups Water
1 Pinch x Natural sea salt

Garnishes

1 Sprig x Fresh basil (Sliced)
1 Sprig x Fresh coirander/Cilantro (Sliced)
2 x Spring onions (Washed & sliced)
1/2 x Lime (Cut into wedges)

Method

1) Place a large saucepan onto a medium heat with a tablespoon of oil. Once hot add the onions, grated garlic and ginger. Cook down for 2 minutes then add the sliced peppers. Cook for a further 2 minutes then add the sliced green peppers. Add the rest of the ingredients and turn down to a low. Add 200ml of water and cook down slowly for an hour.

2) Prepare the garnishes and place them into separate bowls.

3) Place the rice into a large saucepan with the water and the salt. Place a lid on top of the saucepan and place onto a high heat. Once the water starts to simmer, turn down to a low heat and cook for 10 minutes. Take off the heat after 10 minutes and do not remove the lid. Allow it to steam for a further 10 minutes.

4) Once the curry is ready place a frying pan onto a high heat with a tablespoon of oil. Pat the shrimp with kitchen roll to remove any excess moisture to prevent spitting when it goes into the pan. Season with natural sea salt and place into the pan. Cook for 1 – 2 minutes each side depending on the size. Take out of the pan and into the curry. Add the green vegetables and cook for a further 5 minutes. Serve up the curry with the rice & garnishes over the top.
